1.長時間光照則著色。與水共熱產生少量吲哚，如在氫氧化鈉、硫酸銅存在下加熱，則產生多量吲哚。與酸在暗處加熱較穩定。與其他氨基酸、糖類、醛類共存時極易分解。
2. 存在于白肋煙煙葉、煙氣中。

無臭或微臭，稍有苦味。熔點289℃，長時間光照則著色。與水共熱產生少量吲哚。如在氫氧化鈉、硫酸銅存在下加熱，則產生多量吲哚。色氨酸與酸在暗處加熱，較穩定。與其他氨基酸、糖類、醛類共存時極易分解。如無烴類共存，與5mol/L氫氧化鈉共熱至125℃仍穩定 。用酸分解蛋白質時，色氨酸完全分解，生成腐黑物。略溶于水（1.1g/100ml，25℃）。
