L- 乳酸是以玉米淀粉為原料，經過生物發酵精制而成的一種有機酸，為無色 澄清粘性液體，水溶液顯酸性反應。與水、乙醇或乙醚能任意混合，在氯仿中不溶。因其 左旋的特征，具有很好的生物相融性， 能與哺乳動物相融， 可直接參與人體代謝、無任何副作用，被廣泛應用于食品、醫藥等領域；

1．食品行業： 主要用于糖果，飲料（如啤酒，葡萄酒及乳酸類飲料）等食品加工業中，作為酸味劑及口味調節劑，被稱為絕對安全的食品添加劑。另 還可用于清涼飲料、蔬菜的加工和保藏；
2． 醫藥行業： L- 乳酸(L-lactic acid)是一種重要的醫藥 中間體， 可用作生產紅霉素林格氏液輸液、 L 乳酸鈣、 L 乳酸鈉、 L 乳酸鋅、 L 乳 酸亞鐵等藥物還可用作 手術室、病房、實驗室等殺菌消毒劑
