性狀：無色半透明的結晶或白色的顆粒,或白色結晶狀粉末，常含一分子結晶水，無臭，味極酸，溶于水、醇和乙醚。其鈣鹽在冷水中比熱水中易溶解，此性質常用來鑒定和分離檸檬酸。結晶時控制適宜的溫度可獲得無水檸檬酸。水溶液呈酸性。在干燥空氣中微有風化性，在潮濕空氣中有潮解性。175℃以上分解放出水及二氧化碳。
物化性質: 相對密度1.542，熔點153℃(失水)，折射率 1.493~1.509，溶液結晶臨界溫度36.6℃(36.6℃以上結晶為無水檸檬酸，36.6℃以下結晶為一水檸檬酸)。

Description: colorless translucent crystalline or white particles, or white crystalline powder, often containing a crystalline water, odorless, very sour taste, soluble in water, alcohol and ether. Its calcium salts are more soluble in cold water than in hot water. This property is often used to identify and separate citric acid. The anhydrous citric acid can be obtained by controlling the suitable temperature during crystallization. The aqueous solution is acidic. Micro weathering in dry air, deliquescence in moist air. Release water and carbon dioxide over 175 degrees celsius.
Physical and chemical properties: relative density 1.542, melting point 153 DEG C (water loss), refractive index 1.493~1.509, solution crystallization critical temperature 36.6 degrees Celsius (above 36.6 degrees Celsius, crystallization is anhydrous citric acid, 36.6 degrees below crystallization is a water citric acid).
