茶多酚，又名抗氧靈、維多酚、防哈靈，是茶葉中所含的一類多羥基類化合物，簡稱TP，主要化學成分為兒茶素類（黃烷醇類）、黃酮及黃酮醇類、花青素類、酚酸及縮酚酸類、聚合酚類等化合物的復合體。其中兒茶素類化合物為茶多酚的主體成分，占茶多酚總量的65%~80%。兒茶素類化合物主要包括兒茶素（EC）、沒食子兒茶素（EGC）、兒茶素沒食子酸酯（ECG）和沒食子兒茶素沒食子酸酯（EGCG）4種物質。

【產品性狀】

茶多酚為淡黃至茶褐色略帶茶香的水溶液、粉狀固體或結晶，具澀味，易溶于水、乙醇、乙酸乙酯，微溶于油脂。耐熱性及耐酸性好，在pH2~7范圍內均十分穩(wěn)定。略有吸潮性，水溶液pH3~4。在堿性條件下易氧化褐變。遇鐵離子生成綠黑色化合物。
