性質
阿斯巴甜在高溫或高pH值情形下會水解，因此不適用需用高溫烘焙的食品。不過可藉由與脂肪或麥芽糊精化合提高耐熱度。阿斯巴甜在水中的穩定性主要由pH值決定。在室溫下，當pH值為4.3時最為穩定，半衰期約為300天。當pH值為7的環境下，其半衰期則僅有數天。然而大部分飲料的pH值都介于3至5間，所以添加在飲料中的阿斯巴甜均很穩定。但當需要較長保存期限時，像是自動飲料機的糖漿。阿斯巴甜會和其他較為穩定的甜味劑混合使用，例如糖精。用于粉狀沖泡飲料時，阿斯巴甜的氨基會和某些香料化合物上的醛基進行梅勒反應，導致同時失去甜味和香味。可以縮醛來保護醛基避免此狀況發生。
主要用途
是一種天然功能性低聚糖,不致齲齒、甜味純正、吸濕性低,沒有發黏現象。不會引起血糖的明顯升高,適合糖尿病患者食用。我國規定可用于糕點、餅干、面包、配制酒、雪糕、冰棍、飲料、糖果、用量按正常生產需要。
