化學性質
1、遇明火、高熱可燃。若遇高熱，容器內壓增大，有開裂和爆炸的危險。
2、苯乙酮分子結構：甲基C原子以sp3雜化軌道成鍵，苯環和羰基C原子以sp2雜化軌道成鍵。苯乙酮能發生羰基的加成反應、α活潑氫的反應，還可發生苯環上的親電取代反應，主要生成間位產物。 [1]

應用
用于制造香皂和紙煙。也用作有機化學合成的中間體、纖維樹脂等的溶劑和塑料的增塑劑。用于調配櫻桃、見過、番茄、草莓、杏等食用香精，也可用于煙用香精中。在最終加香食品中的建議用量為0.6~20mg/kg [4] 。
作溶劑使用時，有沸點高、穩定、氣味愉快等特點。溶解能力與環己酮相似，能溶解硝化纖維素、乙酸纖維素、乙烯樹脂、香豆酮樹脂、醇酸樹脂、甘油醇酸樹脂等。常與乙醇、酮、酯以及其他溶劑混合使用。
有沸點高、穩定等特點，常與其他溶劑混合使用。
