茶氨酸（L-Theanine）是茶葉中特有的游離氨基酸，茶氨酸是谷氨酸γ-乙基酰胺，有甜味。茶氨酸含量因茶的品種、部位而變動。茶氨酸在干茶中占重量的1%-2%。茶氨酸在化學(xué)構(gòu)造上與腦內(nèi)活性物質(zhì)谷酰胺、谷氨酸相似，是茶葉中生津潤甜的主要成份。茶氨酸含量約為新茶的1～2%左右，其含量隨發(fā)酵過程減少。
茶氨酸為白色針狀體，易溶于水。具有甜味和鮮爽味，是茶葉的滋味的組分。其比旋光度α]20D為[：+8.0°-+8.5°。
日本人常用遮蔭的方法來提高茶葉中茶氨酸的含量，以增進(jìn)茶葉的鮮爽味
